Chicken Stir-Fry with Rice Noodles

Ingredients
2 Blue Dragon Medium Rice Noodles nests
2 chicken breasts (sliced into strips)
1 sliced red pepper & green pepper
4 oz sliced mushrooms, ½inch sized piece of ginger (peeled & shredded)
4 cloves garlic
1 cup chicken stock
2 Tbsp soy sauce
1 sliced chili
4 oz broccoli
1 teaspoon corn starch
Instructions
Boil 2 noodle nests for 5 minutes, drain and stir in a little oil.
Stir-fry chicken in a little oil until cooked through, remove from pan and set aside.
In a mixing bowl combine the chicken stock, soy sauce, and corn starch.
Add the ginger and garlic and stir-fry until fragrant then add the peppers, broccoli, chili and mushrooms and stir-fry for another 2 minutes.
Add back the chicken and noodles and stir-fry until everything is hot, add the combined stock mixture and bring to a boil. Add a touch of sesame oil for flavor, if desired.
