  • 4 skinless salmon fillets
  • 8 tbsp Blue Dragon Sweet Chili Dipping Sauce
  • 1 red onion, finely sliced
  • 3.5oz spinach leaves, shredded
  • jasmine rice, to accompany (long-grain or basmati will also be fine)


  1. Preheat the oven to 200’c/400’F. Take 4 sheets of foil and place a salmon fillet in the center of each one.
  2. Top each fillet with 2tbsp Sweet Chili Dipping Sauce, and then divide the red onion and spinach between each fillet.
  3. Fold over the foil and seal the edges together by folding them over. Place in the oven for 15 minutes, then remove and leave to stand for 5 minutes.
  4. Remove from the foil and serve with the vegetables and sauce poured over.
  5. Best served with rice or salad.


For extra fluffy basmati rice, soak it for 20 minutes before cooking -the rice will absorb some of the water and after cooking will become lighter as a result of this.
